Background The Federal Bureau of Prisons is issuing a solicitation for dairy and cheese items to be delivered to FCC Beaumont for the 3rd Quarter of Fiscal Year 2026. The goal of this contract is to provide compliant food products that meet the National Menu Specifications, ensuring quality and safety standards are upheld. Compliance with these specifications is mandatory, and no substitutions will be accepted. Work Details The following dairy and cheese items are required: 1. Margarine, Bulk, All Vegetable: Must comply with Federal regulations (21 CFR Part 166) and USDA specifications for vegetable oil margarine. Contains not less than 80% fat. Packaging: 30 lb case. 2. Margarine, Reddies, All Vegetable: 90 patties per lb on paper chips, 12 lbs per case. Same compliance requirements as above. 3. Kosher Milk Substitute/Shelf Stable Milk: Skim or fat-free, individual 8-ounce serving. Must be processed under Ultra High Temperatures (UHT) and certified kosher. Each package must have kosher certification. 4. Cheese, Cheddar: U.S. Grade AA or A, CID-A-A-20208C, Type I - Cheddar cheese (21 CFR §133.113). Must contain not more than 39% moisture and at least 50% milk fat. Packaging: 40 lb sealed bags or containers. 5. Cheese, Mozzarella: Low-moisture part-skim mozzarella conforming to CID-A-A-20248C standards with specified moisture and fat content ranges. Packaging: 40 lb sealed bags or containers. 6. Cheese, Sliced (Real Cheese): As specified in the Code of Federal Regulations (TITLE 21), must include one of the following cheeses: Pasteurized Process Cheese American, Cheddar, Provolone, Swiss, Colby, or Monterey Jack.
